In the box this week: Green beans, corn, onion, beets, carrots, cucumber, zucchini, eggplant, tomatoes, green pepper, jalapeno peppers, watermelon, and a peach.
I'm really enjoying the variety in this weeks box! And there are a few totally new items this week too - watermelon (isn't it just the cutest little melon you ever did see?!), eggplant, and jalapenos are all new!
Eggplant is not normally something I would buy at the store, but I'm excited to try a new eggplant recipe. This Spicy Asian eggplant and quinoa from Julia's Album looks yummy!
But I might have to tone down the spicy just a little for us - we are not huge spicy food people.
SO...I'm not quite sure what to do with the jalapenos...Hopefully they are not to spicy for some salsa!

Do you have a favorite way to eat eggplant?
I love eggplants - make little pizzas out of them :) Put sauce & cheese & mushrooms on them & bake... YUM!
ReplyDeleteLooks delicious! We pickle our jalapeƱos with some sweeter stuff which tones down the spice, and they are delicious!
