Adventures in Gluten Free Cooking: The Great Search

Switching to a gluten free diet has really not been that difficult for us. There have only been a few baked items that I have had to continue to search for a perfect GF recipe. At the moment my white whale is a GF biscuit that is fluffy and tasty. Daniel LOVES biscuits! For breakfast, lunch, or dinner he would eat biscuits with every meal. I just can't get it quite right. But I tried again tonight, and my results were ok. 
Fluffy GF Biscuits
*makes 6 biscuits 
Ingredients: 
1/2 c white rice flour
1/2 c tapioca starch
1/2 t. gelatin 
1/2 t. salt
2 t sugar
1/2 t. cream of tartar
1/4 c cold butter
1 egg
1/3 c milk



I don't have a pastry cutter, so I use my cheese grater. 
However you want to cut the butter into the dry ingredients will work...
It will look like this:
Add the milk and egg and...
I use an upside down cup dusted with tapioca starch to make my circles
Results: I was a bit disappointed that they did not get tall, but kind of spread out. I am trying to make biscuits that could be split in half, and these were not tall enough or flakey enough. Daniel did point out 2 of them could be used to make a sandwich since they were flat.  
They were fluffy and had good flavor (yummm, butter!) The search for the perfect GF biscuit is defiantly not over, but this recipe is one that I will keep working with. Please let me know if you have any suggestions on how to improve the recipe. 
We ate our biscuits with beef stew over it.

  4. I don't know why I never thought of using a cheese grater in place of a pastry cutter. Great idea! I have to make gf biscuits for a friend, so I'll be coming here for inspiration.   6. This looks great..is gluten free a preference for you? Or is this something that you have to do? I'm just curious.   7. Your GF biscuits look very good. I don't have much experience with GF baking, but keep trying I'll bet you hit on a version of a biscuit that you really like! I've noticed products like Bisquick say they have a GF version, would that be an option?
