Here we go with our CSA (community supported agriculture) box #2 of the summer!
This week we have broccoli, kale, lettuce, strawberries, green onions, radishes, yellow summer squash, and rhubarb.
My rhubarb bars last week did not turn out quite as expected. They were still yummy, just not a recipe I'm ready to share on the blog yet. I can use some of this rhubarb to try again this week. But I'm also thinking of trying something savory with it like this
Two items in this week's box are a little unfamiliar to me. The summer squash - which I believe is a lot like zucchini but not a regular purchase for me. I'm thinking of making this

The other items I'm not sure what to do with are the radishes. I don't think I have ever purchased them. And I have no idea what to make with them...besides using them on salad? I found a list of 13 Tasty Radish Recipes on Real Simple.Com, but none of them really caught my eye. What do you make with radishes?
I've already eaten a few of the strawberries. Yum! A special fruit treat in our veggie box for the week. I'm off to wash up the lettuce so it doesn't get floppy. Happy Wednesday!
We had yellow crookneck squash in our CSA basket, too! I just sliced them into discs, placed them flat on a baking sheet and brushed olive oil on them, and roasted them for 40 min at 425 degrees. So easy and they were fabulous!!
