Adventures in Gluten Free Cooking: Scones

The other day Daniel woke up and said he felt like scones for breakfast.
Random, I know. 
Actually, I think it came from a TV show we were watching the night before 
where the characters were eating scones. 
ANYWAY
I looked up a bunch of recipes, 
and as usual, did my best to come up with a gluten free recipe. 
Guess what!?! They were fantastic! 
So I wanted to share the recipe with all of you wonderful readers!
(ok, so I didn't take pictures of the process because it was early and it was an experiment...)
Ingredients:
2 cups gluten free flour mix (I used 1 c. rice flour, 1/2 c. tapioca starch, 1/2 c. corn starch)
1/4 teaspoon xanthan gum
1/3 cup sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, cold
1/2 cup raisins
1/2 cup sour cream
1 large egg

Step 1) Pre-heat oven to 400 degrees.
Step 2) Mix all dry ingredients in food processor. 
Step 3) Add butter and mix. Mixture will be sand like.
Step 4) Mix together egg and sour cream and add to the food processor along with raisins. Mix until the dough forms a ball.
Step 5) Place dough on to plastic wrap dusted with tapioca starch to prevent sticking and form into circle. Cut circle into 8 pieces. Place pieces on to parchment paper lined baking pan.
Step 6) Bake at 400 degrees for 15-18 min.

  6. Oh, yum! That just jumps off the screen and makes me want to eat it. I have a dear friend who gets together with me to drink coffee and gossip. She's got a gluten allergy, though, so I'm ALWAYS looking for a little something tasty I could make for her. These GF scones will do the trick! Thank you for sharing!
