Today I am sharing with you one of our favorite breakfast recipes - we have this (or a version of this) several mornings a week.
Ingredients:
1 1/2 c. water
1 1/2 c. milk
1 c. GF oats
1 apple pealed and cut into small chunks
1/4 c raisins
2 T. apple butter
1 t. vanilla
2 T. honey or agave nectar
dash of salt
Pre-heat oven to 350 degrees. Combine all ingredients into sauce pan and warm until the liquid is just starting to boil. Remove from heat and place in oven safe dish (I used an 8X8 glass dish). Bake for 15 min. Stir. Bake for 15 more min (for a total of 30 min). Remove from oven and enjoy!
This recipe is VERY flexible. We have used lots of different flavors: strawberries, cranberries, maple syrup, peanut butter and bananas...we like to mix it up :) Many days we will add a few tablespoons of ground flax seed to give the oats a little more fiber (I was out of flax today...). Also, we like our oatmeal a little more soupy, if you like yours less soupy, start with less liquid (like 2 c water and 1 c milk). If you have dairy issues, you can just use water and it will still turn out yummy (I have tried it with only water when I was out of milk and it worked!)

ReplyDeleteThis looks interesting, I've never tried oatmeal any way besides in a cookie or a bowl with a little brown sugar. But an apple? Raisins? Apple butter? You're so creative!
