Adventures in the Kitchen: Oatmeal Cranberry Cinnamon Chip Cookies

One of my favorite ingredients to use this time of year are cranberries. I put them in everything! Muffins, granola bars, oatmeal, cookies. One of my new favorite recipes to use dried cranberries in is this one:

Ingredients you will need:
3 eggs, beaten
1 cup dried cranberries
1 teaspoon vanilla extract
1 cup butter
1 cup packed brown sugar
1 cup white sugar
2 1/2 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons baking soda
2 cups rolled oats
1 cup cinnamon chips {more about these HERE}

Directions:
1) Mix eggs, vanilla and dried cranberries in a bowl. Refrigerate for 1 hour.
2) Preheat oven to 350 degrees.
3) In a large bowl, cream the butter, brown sugar, and white sugar together. Sift together the flour, salt, and baking soda; stir into the creamed mixture. Then stir in the cranberry mixture, rolled oats, and cinnamon chips.
4) Drop by teaspoonfuls onto an unprepared cookie sheet. Bake for 11 minutes, or until lightly browned.

  3. The combination of cranberries, cinnamon, and oatmeal makes me think that the aroma of these cookies baking is insanely good.
