The other night I tried a recipe that I pinned from Michelle @ One Ordinary Day
White Beans and Cabbage Hash
2 Tbsp. olive oil
3 medium potatoes, cut into small cubes
1 medium tomato, diced
1/2 large onion, diced
sea salt salt
black pepper
1 t. fresh thyme chopped
1 15-oz. can white beans, rinsed and drained
3 c. finely shredded green cabbage
grated Parmesan cheese
Pour the olive oil into a large skillet. Add potatoes, salt, pepper and thyme. Toss and cook until potatoes are cooked through, 5-8 minutes. Stir mixture occasionally.
Add in the onion, tomato, and beans. Cook until beans are heated through (about 5 min). Be careful not to stir to much as the beans may start to break down and get mushy.
When the beans are warmed through, stir in the cabbage and cook another 3 min or so until the cabbage loses a bit of its structure.
Add Parmesan cheese and turn off stove. Let the cheese melt and then dish up.
We had our hash as a side dish with grilled steak, but this would also make a satisfying main dish.
